From the rugged highlands of Papua New Guinea comes a coffee that stands among the best the country has to offer. This microlot from the Kindeng Dry Mill in the Jikawa Province represents the exceptional work of more than 1,500 smallholder farmers from the Kindeng and Arufa municipalities. Each producer cultivates coffee on just one to two hectares of land, growing it under shade alongside other crops in the cool mountain climate of the Western Highlands.
After harvest, ripe cherries are delivered to the mill where they undergo a natural process. The fruit is carefully dried on raised beds and canvasses for nearly a month, turned several times each day to ensure uniform moisture and consistency. Only the finest lots are selected to become part of this microlot, showcasing the very best flavors from the region.
In the cup, expect jammy cranberry and cobbler notes, layered with brown sugar sweetness and bright, fruit-forward acidity. The result is a coffee that is lush, complex, and bursting with character.
