Meet Honduras Finca El Matazano, our newest featured single origin and a true family affair. It comes from Elvin Castillo, a third generation coffee grower in the La Paz region of Honduras who took over Finca Matazano from his father, Antonio. Elvin didn't just inherit the land, he inherited the eye. His dad taught him to spot a perfect coffee cherry by look and feel alone, and Elvin has carried that instinct even further by training as a professional cupper, shaping every harvest with the final cup already in mind.
This lot is honey processed, a method that leaves some of the fruit's natural sweetness on the bean while it dries, giving the cup extra body and sweetness. In your mug, expect praline, warm baking spice, and bright fresh citrus, balanced by a lively tart acidity and a smooth finish.
